Honeydew honey originates from the sap of certain native beech trees, resulting in a honey with a distinctly malty flavour, liquid consistency and dark amber colour. New Zealand Honeydew Honey has high levels of antioxidants and complex sugars (oligosaccharides) which selectively stimulate the growth and activity of healthy gut flora - especially useful following treatment with antibiotics. These oligosaccharides are classed as "prebiotics". Honeydew honey lends a unique flavour to cooking and is also tasty on bread or drizzled over pancakes.
